Our story

From a garage to a bakery.

Fatme Fouani came to Michigan from Lebanon seeking care for her daughter. When times were hardest, community stepped in — a saj oven gifted in kindness became the heart of a home kitchen, then a loyal following built from a family garage. Today, four children work beside her, and the brick-and-mortar on Middlebelt welcomes neighbors who say it smells like their grandmother's house.

THE SAJ

Saj bread is stretched paper-thin across a hot dome — the dough tightens, bubbles, and chars in seconds. It is not generic flatbread: the saj gives manaeesh their snap, their chew, and the scent that pulls you off Middlebelt before you see the sign.

Guests who grew up in Lebanon say it tastes like their grandparents in the south made it.
